Penrhos Court is more a way of life than a hotel. In 1971 it was in such a parlous state that it was due for demolition. Martin Griffiths and Daphne Lambert have spent the last 30 years rolling the clock back, but perhaps not as far as 1280 when it was probably built. Now, as well as being a faithfully restored example of medieval architecture, it is an organic farm and (unusually) a certified organic restaurant; Daphne, a professional nutritionist and chef of the restaurant for better than two decades, buys from other organic producers what she doesn’t grow herself in her own kitchen garden, and runs organic cookery courses for those who want to become initiates.
